After being freeze dried your your normal, soft and chewy Blue Blueberry Clouds becomes supper crunchy, airy and double in size. But it doest lose any of its flavour, it actually intensifies by 10 times. 

What does Freeze Dried mean ? 
Freeze Drying is a process which takes the water content out of products, similar to dehydration. The difference is that the product is heated in a vacuum chamber which is also freezing cold. This causing the water to turn from vapor to frozen and leaving a product which is different in texture and enhanced taste. 

Products can also then be stored for long periods of time up to 25 years depending on what has been freeze dried.
